Bioactive Foods in Promoting Health: Probiotics and Prebiotics $165 What is a dietary supplement?Congress defined the term “dietary supplement” in the Dietary Supplement Health and Education Act (DSHEA) of 1994. A dietary supplement is a product taken by mouth that contains a “dietary ingredient” intended to supplement the diet. The “dietary ingredients” in these products may include: vitamins, minerals, herbs or other botanicals, amino acids, and substances such as enzymes, organ tissues, glandulars, and metabolites. Dietary supplements can also be extracts or concentrates, and may be found in many forms such as tablets, capsules, softgels, gelcaps, liquids, or powders… DSHEA places dietary supplements in a special category under the general umbrella of “foods,” not drugs, and requires that every supplement be labeled a dietary supplement.http://www.cfsan.fda.gov/~dms/ds-oview.html#what Probiotics and prebiotics are components present in foods, or that can be incorporated into foods, which yield health benefits related to their interactions with the gastrointestinal tract (GI). Not all bacteria present in fermented milk products or yogurt have a probiotic effect. Fermented Foods and Beverages of the World $146.03 Did you know? It’s estimated that fermentation practices have been around since as early as 6000 BC, when wine was first being made in Caucasus and Mesopotamia. Today, there are roughly 5000 varieties of fermented foods and beverages prepared and consumed worldwide, which accounts for between five and forty percent of daily meals. Fermented Foods and Beverages of the World is an up-to-date review on fermentation practices, covering its storied past, cultural aspects, microbiology, biochemistry, nutrition, and functionality. With contributions from 24 seasoned fermentation authorities, this book begins with a concise introduction to food fermentation — one of the oldest biotechnological processes — including its history and global varieties. After covering the various preparation techniques and culinary methods, the book addresses the microbiology-phenotypic and genotypic characterizations, the identifications of functional microorganisms, the functional and technological properties, and issues related to food safety. The book also explores the functional properties of fermentation, how it improves product shelf life, ensures food safety, enriches nutritional supplements, and increases the probiotic functions in some foods. GI Microbiota and Regulation of the Immune System $229 The idea that the microbial communities within the GI tract have a profound influence on general human health actually originated with Russian scientist Elie Metchnikov at the turn of the last century. Also known as the “father of immunology”, Metchnikov believed that putrefactive bacteria in the gut were responsible for enhancing the aging process. He theorized that ingestion of healthy bacteria found in fermented foods could counteract toxic bacteria and was the key to good health. His theories concerning good bacteria and health can be found in his treatise “The Prolongation of Life: Optimistic Studies”. These writings prompted Japanese scientist Minoru Shirota to begin investigation of how fermentative bacteria improve health. He succeeded in isolating a strain of Lactobacillus that could survive passage through the intestine, while promoting a healthy balance of microbes. The “Shirota strain” is still used today in the fermented beverage Yakult. It is clear from a commercial standpoint that these ideas have inspired the development of a probiotic industry, which has expanded greatly in the U.S. over the past 5-10 years. Likewise, scientific studies investigating the microbiota and the immune system have increased significantly in recent years. This increase in research is also due to advances in technologies that enable the investigation of large microbial communities, a resurgence in gnotobiotic animal research, and improved methods for molecular analysis of probiotic bacterial species. Our interest in this area stems from our laboratory observations indicating that antibiotics and fungi can skew microbiota composition and systemic immune responses. Our initial base of references upon which to develop further hypotheses concerning the mechanisms involved in microbiota regulation of immune responses was limited. However, in presenting the research at national scientific meetings and at universities across the country, |

Handbook of Fermented Functional Foods $154.84 For centuries, people around the world have used fermentation to preserve and enhance the flavor of a wide variety of foods. Today, complex interactions of microbiota in the digestive tract are found to influence proper digestion, metabolism, and disease resistance. With greater emphasis on natural products and the role of food in health and wellbeing, food manufacturers are once again turning to fermentation not just for extending shelf life, but to create functional food products that take an active part in maintaining overall health. Featuring five new chapters and updating all data to reflect the latest research findings, Handbook of Fermented Functional Foods, Second Edition examines the health benefits of fermented foods as well as the processes and production techniques involved in manufacturing fermented food products. Maintaining the highest quality information and the easily accessible format of its predecessor, this edition includes new chapters on olives, tempeh, and the traditional fermented foods of China, Thailand, and India. It looks at the history of fermented foods and reveals the specific benefits of fermented milk, Kefir, yogurt, and cheese. Contributions cover fermented soy products, including Natto and Miso, as well as the fermentation of other vegetables such as Korean Kimchi and Doenjang and German sauerkraut. The book also explains the bioactivity and bioavailability of microorganisms and investigates the more recent practice of producing probiotic cultures to add to fermented foods for increased health benefit. Presenting new findings and interpretations that point even more clearly to the important role fermented foods play in our diet and overall health, this second edition demonstrates the current knowledge of fermented food production and reflects the growing credibility of probiotics in health maintenance. |

Stop Aging, Start Living: The Revolutionary 2-Week pH Diet that Erases Wrinkles, Beautifies Skin, and Makes You Feel Fantastic $11.99 Though other skin-care experts have identified free radicals and cellular inflammation as key triggers to the breakdown of healthy skin, renowned dermatologist and former National Institutes of Health fellow Jeannette Graf, M.D., has discovered a way to prevent these saboteurs from developing in the first place—rather than just treating the symptoms they’ve caused.Based on the scientifically groundbreaking premise that our cells—and consequently our skin—can only function best when the pH balance of our body is at its proper level, Dr. Graf’s four-part plan focuses on changing your body’s ratio of acids to alkalines. Most of us tend to eat three acidic-building foods (like sugar, refined carbs, meat, and dairy) for every one alkalinizing food (dark green leafy vegetables, garlic, onions, olive oil, lemon, fruit, nuts and seeds, and whole grains)—the reverse of the ideal ratio. And while changing your diet is important, food is not the only way to shift this ratio or reverse the cell aging that’s affecting your skin. The plan also includes detailed information on:• daily alkalinizing “cocktails” • quality calcium-mineral supplements• probiotic supplements (good bacteria in a bottle)• how to assess your skin and care for it accordingly—choosing the right cleansers, moisturizers, and treatments that will give you the most noticeable results (hint: many of these products line the shelves of your local drugstore) • the joy prescription: activities that can add exhilaration and laughter to your life and increase the neuropeptides in the brain that actually rejuvenate skin cells• nutrients in foods that enhance cell energy production and cell signalingBut don’t just take her word for it: Stop Aging, Start Living is filled with testimonials from her patients.
